Be prepared to have the best damn quiche of your entire life. This is the perfect quiche recipe as it turns out to be a wonderful buttery tart crust filled and baked with eggs, melted caramelized leeks, apple wood smoked bacon, and cave-aged gruyere. It's one hell of a combination that leaves such a great impression and taste, making you want more of it.
The recipe can be found here: Bacon-and-Leek Quiche from Food & Wine. While the recipe calls to make two quiches, I halved the recipe to make just one. If it turns out that you made too much filling, do not overfill the tart crust or you risk your filling spilling over; I'd save it and make an omelet with it. There are a lot of processes involved that deserve love and attention but it's worth it in the end. Serve it with a side of arugula, or a nice salad.
