The first time I ate falafels was in 2008 at Falafels Drive In in San Jose, CA. Since then I've frequented a lot of restaurants serving falafels, but they couldn't measure up to Falafels Drive In.
I found this awesome recipe and I thought it would be a great idea to try making our own falafels and dill tzatziki sauce.
The process was pretty effortless. Instead of canola oil, we use either grape seed or avocado oil as it handles high heat just as well and is healthier. I used the best garbanzo beans from Palouse (great quality and GMO free).
The results were outstanding and we've made this recipe countless times! Patrick and I are addicted to these perfectly fried balls; it's crispy outside and fluffy inside, full of cumin and parsley flavors.
